2 tsp Dijon mustard
1/2 tsp salt, kosher
1 1/2 tsp maple syrup
1 tbsp olive oil
1 cucumber, english, peeled
1 1/2 tsp dill, fresh, chopped
Instructions:
Prep
Whisk together vinegar, mustard, salt, and maple syrup in a bowl, then add oil in a slow stream, whisking.
Halve cucumber lengthwise and remove seeds with a small spoon.
Cut halves crosswise into 1/8-inch-thick slices.
Add cucumber and dill to vinaigrette, tossing to coat.
