Ingredients:
1 cup bread crumbs, Italian
1/4 tsp salt, sea
1/4 tsp pepper, black freshly ground
1 egg white, lightly beaten
2 tbsp water
1 lb chicken breast, boneless, skinless, cut into thin strips
3 tbsp mayonnaise, reduced-calorie, cholesterol-free
1/4 tsp curry powder, hot
1 tsp Dijon mustard
1 tsp honey
Instructions:
Prep
Preheat the broiler.
Mix together the bread crumbs, salt and pepper.
Place the bread crumb mixture in a shallow dish.
Whisk together the egg white and water and place in a shallow dish.
Dredge the chicken strips in the egg while followed by the bread crumbs.
Repeat to make sure the chicken is well coated.
Place on a baking sheet.
Cooking
Broil the chicken pieces until well browned, turning over once, about 5 minutes per side.
Meanwhile, mix together the mayonnaise, curry powder, Dijon and honey.
Serve the chicken fingers with the mayonnaise dipping sauce on the side.
