Ingredients:
  • 1 cup bread crumbs, Italian
  • 1/4 tsp salt, sea
  • 1/4 tsp pepper, black freshly ground
  • 1 egg white, lightly beaten
  • 2 tbsp water
  • 1 lb chicken breast, boneless, skinless, cut into thin strips
  • 3 tbsp mayonnaise, reduced-calorie, cholesterol-free
  • 1/4 tsp curry powder, hot
  • 1 tsp Dijon mustard
  • 1 tsp honey
Instructions:
  1. Prep
    1. Preheat the broiler.
    2. Mix together the bread crumbs, salt and pepper.
    3. Place the bread crumb mixture in a shallow dish.
    4. Whisk together the egg white and water and place in a shallow dish.
    5. Dredge the chicken strips in the egg while followed by the bread crumbs.
    6. Repeat to make sure the chicken is well coated.
    7. Place on a baking sheet.
  2. Cooking
    1. Broil the chicken pieces until well browned, turning over once, about 5 minutes per side.
    2. Meanwhile, mix together the mayonnaise, curry powder, Dijon and honey.
    3. Serve the chicken fingers with the mayonnaise dipping sauce on the side.
