Ingredients:
  • 1/2 tsp cooking oil spray
  • 7 tbsp sugar, white granulated
  • 1/4 cup cocoa powder
  • 1 tbsp flour, all purpose
  • 1/8 tsp salt, sea
  • 1/4 cup milk, low fat
  • 1 egg yolk
  • 1/2 tsp vanilla extract
  • 2 egg white
  • 1/8 tsp tartar, cream of
  • 1 1/2 oz chocolate, bittersweet, finely chopped (~1/3 cup)
  • 2 tsp sugar, icing or powdered
Instructions:
  1. Prep
    1. Preheat the oven to 350F.
    2. Coat 4 (4oz) ramekins with cooking spray and use 1 tbsp sugar to coat them.
    3. Combine 4 tbsp of the remaining sugar with the cocoa powder, flour and salt.
    4. Place in a pot over medium heat and gradually whisk in the milk.
    5. Bring to a boil and cook until thick, about 3 minutes, stirring constantly.
    6. Remove from the heat and let stand for 3 minutes.
    7. Slowly whisk in the egg yolks and vanilla.
    8. Spoon into a large bowl and cool.
    9. Whisk the egg whites in a very clean mixing bowl until foamy.
    10. Add the remaining 2 tbsp sugar and cream of tartar and continue to whisk until stiff peaks form.
    11. Gently fold in 1/4 of the whipped egg whites into the chocolate mixture.
    12. Gently fold in the remaining egg white mixture 1/4 at a time and chopped chocolate until well incorporated.
    13. Spoon into prepared ramekins.
  2. Cooking
    1. Bake for 15 minutes or until set.
    2. Sprinkle with powdered sugar and serve.
