Ingredients:
1/2 tsp cooking oil spray
7 tbsp sugar, white granulated
1/4 cup cocoa powder
1 tbsp flour, all purpose
1/8 tsp salt, sea
1/4 cup milk, low fat
1 egg yolk
1/2 tsp vanilla extract
2 egg white
1/8 tsp tartar, cream of
1 1/2 oz chocolate, bittersweet, finely chopped (~1/3 cup)
2 tsp sugar, icing or powdered
Instructions:
Prep
Preheat the oven to 350F.
Coat 4 (4oz) ramekins with cooking spray and use 1 tbsp sugar to coat them.
Combine 4 tbsp of the remaining sugar with the cocoa powder, flour and salt.
Place in a pot over medium heat and gradually whisk in the milk.
Bring to a boil and cook until thick, about 3 minutes, stirring constantly.
Remove from the heat and let stand for 3 minutes.
Slowly whisk in the egg yolks and vanilla.
Spoon into a large bowl and cool.
Whisk the egg whites in a very clean mixing bowl until foamy.
Add the remaining 2 tbsp sugar and cream of tartar and continue to whisk until stiff peaks form.
Gently fold in 1/4 of the whipped egg whites into the chocolate mixture.
Gently fold in the remaining egg white mixture 1/4 at a time and chopped chocolate until well incorporated.
Spoon into prepared ramekins.
Cooking
Bake for 15 minutes or until set.
Sprinkle with powdered sugar and serve.
