Ingredients:
  • 1/3 cup sugar, white granulated
  • 1/4 cup cocoa powder
  • 2 tbsp cornstarch
  • 2 tbsp sugar, dark brown
  • 1/8 tsp salt, sea
  • 3 1/4 cups milk, low fat
  • 2 egg yolk, lightly beaten
  • 1 1/4 oz chocolate, bittersweet, chopped (~4 1/3 tbsp)
  • 2/3 tsp vanilla extract
Instructions:
  1. Prep
    1. Combine the sugar, cocoa, cornstarch, brown sugar and salt.
    2. Place in a pot over medium heat and gradually whisk in the milk.
    3. Bring to a boil, stirring constantly.
    4. Continue to cook for 1 minutes after it reaches the boiling point and remove from the heat.
    5. Place the egg yolks in a bowl and slowly whisk in the milk mixture, stirring constantly.
    6. Return the milk and egg mixture to the pot and cook over medium heat stirring constantly for 5 minutes until mixture thicken.
    7. Remove from the heat and add the chopped chocolate and vanilla and stir until chocolate melts.
    8. Divide the pudding among serving dishes and refrigerate for 15 minutes until chilled completely.
