Cantonese Chicken with Orange Sauce

Ingredients:
For the orange sauce
1 1/2 tsp cornstarch
2 tsp soy sauce, low sodium
1/4 cup chicken broth, canned, low sodium
2 tbsp orange juice, frozen concentrate, thawed
2 tbsp Sherry, dry
1 1/2 tsp oyster sauce
1 tsp sugar, white granulated
1/2 tsp ginger, fresh, peeled, grated
For the chicken
1 lb chicken breast, boneless, skinless, sliced into 1/4" thick pieces
1/4 tsp salt, sea
1/4 tsp pepper, black freshly ground
2 tbsp canola oil
3 carrot, peeled and sliced thin diagonally (~1 1/2 cups)
4 spear asparagus, trimmed, sliced into 1" pieces
4 bok choy, baby, quartered and washed
1 tbsp water
2 onion, green / scallion, sliced (~1/3 cup)
2 cloves garlic, minced (~2 tsp)
2 tbsp ginger, fresh, peeled, grated
4 sprigs cilantro, fresh, picked
Instructions:
Prep
For the orange sauce
Combine the cornstarch with the soy and whisk together to blend.
Add the chicken broth, orange juice concentrate, Sherry, oyster sauce, sugar and ginger.
For the chicken
Season the chicken pieces with the salt and pepper.
Cooking
Heat half of the canola oil in a wok over high heat until smoking.
Add the chicken and stir fry for 2 minutes.
Transfer to a bowl.
Heat another half of the oil in the wok over high heat until smoking.
Add the carrots, asparagus, bok choy and water. Stir fry for 1 minute.
Add the green onion, garlic and remaining ginger and cook stirring constantly for 4 minutes until vegetables are crisp tender.
Return the chicken to the wok and stir for 1 minute.
Re-whisk the orange sauce to combine and add to the wok.
Cook until sauce thickens and coats the chicken and vegetables, about 1 minute.
Serve topped with cilantro.
