Grilled Chicken with Spicy Mango Salsa

Ingredients:
1/4 tsp cooking oil spray
1/2 cup onion, red, finely diced
1 pepper jalapeno, stemmed, finely diced (~2 1/2 tbsp)
1 tomatoes, plum, diced
1 mango, peeled, diced
1 tbsp lime zest
1 tbsp lime juice
1/2 cup mint, fresh, chopped
1/4 cup cilantro, fresh, chopped
1 avocado, peeled, diced
1/4 tsp salt, sea
12 oz chicken breast cutlet, cut into equal sized portions
Instructions:
Prep
Preheat the barbecue.
Spray the chicken pieces with cooking oil spray.
Cooking
Heat a non stick pan over medium high heat.
Spray with cooking oil spray and add the onion.
Saute for 5 minutes until onion is soft.
Add the jalapeno, diced tomato and mango.
Cook for 3 minutes,stirring until items are hot.
Add the lime zest and juice and stir.
Add the mint, cilantro and salt and toss to incorporate.
Meanwhile, grill the chicken until just cooked through, about 3 minutes per side.
Transfer to a platter and cover to keep warm.
Serve the chicken topped with warm salsa.
