For the dressing
20 olives, kalamata, pitted, chopped (~1 cup, chopped)
1/3 cup olive oil
1 1/2 tbsp lemon zest
1 tbsp lemon juice
1 clove garlic, minced (~1 tsp)
1/4 tsp red pepper flakes
1/2 tsp salt, sea
1/2 tsp pepper, black freshly ground
4 fish, arctic char, fillet

For cooking
1 tbsp olive oil
5 cups arugula
Alternatives would be:
fish, trout, fillet
Instructions:
Prep
For the dressing
Mix together the chopped olives, olive oil, lemon zest, lemon juice, garlic and red pepper flakes.
Add half the salt and pepper.
Season the arctic char fillets with the remaining salt and pepper.
Cooking
Heat the olive oil in a non stick pan over high heat until almost smoking.
Sear the char, skin side first until crispy, about 3 minutes.
Carefully flip the fish over and allow the fish to cook in the pan for another 2 minutes.
Toss the arugula with half of the dressing.
Divide among plates and top the salad with the fish.
Pour the remaining dressing over fish.
