Carrot Soup with Anise

Ingredients:
2 tsp olive oil
3/4 cup onion, yellow, chopped
3 sprig thyme, fresh
3 star anise
1 bay leaf
1 clove garlic, minced (~1 tsp)
1 lb carrot, peeled, chopped (~3 1/2 cups)
4 cups chicken broth, canned, low sodium
1/2 tsp pepper, black freshly ground
Instructions:
Cooking
Heat the oil in large pot over medium high heat.
Add onion, thyme, 2 star anise, bay leaf, and garlic.
Saute until onion softens, about 5 minutes.
Add carrots and broth. Bring to boil.
Cover, reduce heat to medium-low, and simmer until carrots are very tender, about 20 minutes.
Remove and discard thyme sprigs, star anise, and bay leaf.
Working in small batches, puree soup in blender until very smooth; return to same pot.
Season with pepper.
Finely grind remaining star anise in spice mill or coffee grinder.
Ladle soup into bowls. Sprinkle with ground star anise.
