Ingredients:
  • 2 tbsp olive oil
  • 1 cabbage, red, quartered and sliced thin (~9 1/2 cups)
  • 1/2 tsp salt, kosher
  • 1 tsp bay leaf, whole leaf
  • 3 tbsp wine, red dry
  • 3 tbsp vinegar, red wine
  • 1/2 tsp pepper, black freshly ground
Instructions:
  1. Cooking
    1. In a large sauce pan, heat the olive oil medium high heat.
    2. Add the cabbage and half of the salt and toss continuously for 5 minutes until cabbage begins to wilt.
    3. Add the bay leaf, red wine and red wine vinegar and cook until liquid has evaporated completely approximately 20 minutes, stirring.
    4. Remove the bay leaf and season with remaining salt and pepper.
