Braised Wild Mushrooms on Toast

Ingredients:
1 mushroom, oyster, trimmed (~5 1/4 oz)
8 mushroom, crimini (~4 oz)
6 mushroom, shiitake, stemmed (~3 3/4 oz)
2 tsp olive oil
2 shallots, minced (~1/4 cup)
1/2 tsp thyme, fresh, chopped
1/4 cup wine, white dry
1/4 tsp pepper, black freshly ground
1 tbsp butter, unsalted
1 tbsp garlic, minced
4 slice bread, french sourdough
1 tbsp parsley, fresh italian / flat leaf, chopped
Instructions:
Prep
Preheat the broiler.
Cooking
Heat the olive oil in a pan over medium high heat.
Add the mushrooms and saute for 3 minutes until mushrooms begin to brown and release their liquid.
Stir in the shallots and thyme and saute for 2 minutes.
Add the wine and pepper and reduce the heat to simmer gently for 5 minutes.
Stir in 1/3 of the butter.
Mix the remaining butter with the garlic.
Spread the garlic butter onto one side of the bread slices.
Place the bread slices on a baking sheet and broil until lightly toasted, about 2 minutes.
Turn the bread slices over and broil for and additional 2 minutes until browned.
Add the parsley to the mushroom mixture.
Top each bread slice with the mushroom mixture , slice diagonally and serve.
