Ingredients:
  • 1 mushroom, oyster, trimmed (~5 1/4 oz)
  • 8 mushroom, crimini (~4 oz)
  • 6 mushroom, shiitake, stemmed (~3 3/4 oz)
  • 2 tsp olive oil
  • 2 shallots, minced (~1/4 cup)
  • 1/2 tsp thyme, fresh, chopped
  • 1/4 cup wine, white dry
  • 1/4 tsp pepper, black freshly ground
  • 1 tbsp butter, unsalted
  • 1 tbsp garlic, minced
  • 4 slice bread, french sourdough
  • 1 tbsp parsley, fresh italian / flat leaf, chopped
Instructions:
  1. Prep
    1. Preheat the broiler.
  2. Cooking
    1. Heat the olive oil in a pan over medium high heat.
    2. Add the mushrooms and saute for 3 minutes until mushrooms begin to brown and release their liquid.
    3. Stir in the shallots and thyme and saute for 2 minutes.
    4. Add the wine and pepper and reduce the heat to simmer gently for 5 minutes.
    5. Stir in 1/3 of the butter.
    6. Mix the remaining butter with the garlic.
    7. Spread the garlic butter onto one side of the bread slices.
    8. Place the bread slices on a baking sheet and broil until lightly toasted, about 2 minutes.
    9. Turn the bread slices over and broil for and additional 2 minutes until browned.
    10. Add the parsley to the mushroom mixture.
    11. Top each bread slice with the mushroom mixture , slice diagonally and serve.
