Ingredients:
1 tbsp butter, unsalted
2 tbsp peanut oil
4 chicken breast, boneless, skinless
1/4 tsp salt, sea
1/4 tsp pepper, black freshly ground, Freshly cooked rice
1 onion, yellow, chopped (~2/3 cup)
3 cloves garlic, minced (~1 tbsp)
3 tbsp curry powder, hot
1/2 cup apple, red, diced
1/2 cup apricots, dried, chopped
1/2 cup raisins, dark
1 1/2 cups chicken broth, canned, low sodium
Instructions:
Cooking
Melt the butter and oil in a pan over medium heat.
Season the chicken with salt and pepper.
Add chicken and brown on both sides, about 5 minutes.
Transfer to plate and cover.
Add onion and garlic to pan and saute until translucent, about 3 minutes.
Stir in curry powder.
Return chicken to pan and add apple, apricots and raisins.
Add enough broth to just cover mixture.
Cover and simmer until chicken is just cooked through, about 10 minutes.
Transfer chicken to plate and cover to keep warm.
Continue simmering fruit mixture until sauce thickens, about 5 minutes.
