Beef with Shiitakes and Bok Choy

Ingredients:
1 tbsp sesame oil
3 tbsp ginger, fresh, peeled, chopped
6 onion, green / scallion, sliced thin, diagonally (~1 cup)
1 1/4 cups chicken broth, canned, low sodium
1 1/2 tbsp soy sauce, low sodium
6 oz mushroom, shiitake, stemmed, caps sliced thin (~2 1/2 cups)
2 cups bok choy, sliced thin
1 tbsp vinegar, rice
1 tbsp ketchup, catsup
8 oz beef, tenderloin, sliced thin
Instructions:
Cooking
Heat the sesame oil in a large pot over medium high heat.
Add the ginger and green onions and cook until fragrant, about 1 minute.
Add the chicken broth and soy and bring to a boil.
Reduce the heat, add the shiitakes and bok choy and simmer, covered for 5 minutes.
Add the rice vinegar and ketchup and simmer for 1 minute.
Remove from the heat and add the sliced beef.
Allow to stand, covered, for 5 minutes and then serve.
