Ingredients:
  • 1 tbsp sesame oil
  • 3 tbsp ginger, fresh, peeled, chopped
  • 6 onion, green / scallion, sliced thin, diagonally (~1 cup)
  • 1 1/4 cups chicken broth, canned, low sodium
  • 1 1/2 tbsp soy sauce, low sodium
  • 6 oz mushroom, shiitake, stemmed, caps sliced thin (~2 1/2 cups)
  • 2 cups bok choy, sliced thin
  • 1 tbsp vinegar, rice
  • 1 tbsp ketchup, catsup
  • 8 oz beef, tenderloin, sliced thin
Instructions:
  1. Cooking
    1. Heat the sesame oil in a large pot over medium high heat.
    2. Add the ginger and green onions and cook until fragrant, about 1 minute.
    3. Add the chicken broth and soy and bring to a boil.
    4. Reduce the heat, add the shiitakes and bok choy and simmer, covered for 5 minutes.
    5. Add the rice vinegar and ketchup and simmer for 1 minute.
    6. Remove from the heat and add the sliced beef.
    7. Allow to stand, covered, for 5 minutes and then serve.
