Beef Salad with Chickpeas and Tomatoes

Ingredients:
8 oz beef, top sirloin
1/2 tsp salt, sea
1/2 tsp pepper, black freshly ground
1 2/3 tbsp olive oil
1/2 tsp lemon zest
2 tsp lemon juice
2 tsp oregano, fresh, chopped
1 clove garlic, minced
4 cups shredded lettuce, romaine
1 cup chickpeas / garbanzo bean, canned no salt added, drained, rinsed
2 tbsp cheese, feta, crumbled
1/2 cucumber, english, sliced (~1 1/2 cups slices)
1/2 onion, red, sliced thin (~1 1/3 cups)
1 cup tomatoes, cherry, halved (~10 2/3)
Instructions:
Prep
Place a rack about 4" from the top of the oven.
Preheat the broiler.
Season steak with half of the salt and pepper.
Cooking
Place the steak on a broiler pan and cook for 8 minutes, turning once for medium rare.
Remove from the oven and allow to cool for 5 minutes.
While beef rests, mix together the olive oil, lemon zest, lemon juice, oregano and garlic with the remaining salt and pepper
Thinly slice beef against the grain.
Divide the romaine among plates and top with chickpeas, feta, cucumber, red onion and cherry tomatoes.
Add sliced beef and drizzle with vinaigrette.
