Ingredients:
  • 1 1/2 lb beans, green, trimmed (~123 2/3)
  • 2 onion, red, thinly sliced (~5 1/2 cups)
  • 4 slice prosciutto, thinly sliced and cut into long, thin pieces 
  • 1/4 cup olive oil
  • 3 tbsp lemon juice
  • 1 1/2 tsp rosemary, fresh, coarsely chopped
  • 1/4 tsp salt, sea
  • 1/4 tsp pepper, black freshly ground
  • 1/2 tsp red pepper flakes, 1 teaspoon red pepper flakes
Instructions:
  1. Cooking
    1. In large pot of boiling salted water, cook beans until crisp-tender, 2 to 3 minutes.
    2. Drain in colander, then immediately transfer to bowl of ice and water to stop cooking.
    3. In large bowl, combine beans, onions, prosciutto, olive oil, lemon juice, rosemary, salt, pepper, and red pepper flakes.
    4. Toss gently and let stand at room temperature before serving.
