- 1 1/2 lb beans, green, trimmed (~123 2/3)
- 2 onion, red, thinly sliced (~5 1/2 cups)
- 4 slice prosciutto, thinly sliced and cut into long, thin pieces ♦
- 1/4 cup olive oil
- 3 tbsp lemon juice
- 1 1/2 tsp rosemary, fresh, coarsely chopped
- 1/4 tsp salt, sea
- 1/4 tsp pepper, black freshly ground
- 1/2 tsp red pepper flakes, 1 teaspoon red pepper flakes

- Cooking
- In large pot of boiling salted water, cook beans until crisp-tender, 2 to 3 minutes.
- Drain in colander, then immediately transfer to bowl of ice and water to stop cooking.
- In large bowl, combine beans, onions, prosciutto, olive oil, lemon juice, rosemary, salt, pepper, and red pepper flakes.
- Toss gently and let stand at room temperature before serving.
