Ingredients:
  • 2 tbsp lemon juice
  • 2 tsp olive oil
  • 1/4 tsp salt, sea
  • 1/4 tsp pepper, black freshly ground
  • 1 shallots, sliced thin
  • 1 lb asparagus, trimmed (~28 1/3 spear)
  • 1 tbsp chopped chives, fresh
Instructions:
  1. Prep
    1. Whisk together the lemon juice, olive oil, salt and pepper.
    2. Add the shallots and stir.
  2. Cooking
    1. Steam the asparagus until just cooked, about 5 minutes depending on their thickness.
    2. Pour the vinaigrette over the asparagus and top with chives.
