2 tbsp lemon juice
2 tsp olive oil
1/4 tsp salt, sea
1/4 tsp pepper, black freshly ground
1 shallots, sliced thin
1 lb asparagus, trimmed (~28 1/3 spear)
1 tbsp chopped chives, fresh
Instructions:
Prep
Whisk together the lemon juice, olive oil, salt and pepper.
Add the shallots and stir.
Cooking
Steam the asparagus until just cooked, about 5 minutes depending on their thickness.
Pour the vinaigrette over the asparagus and top with chives.
