Ingredients:
  • 2 1/2 tbsp soy sauce, low sodium
  • 3 tbsp lime juice
  • 3 tbsp water
  • 1 1/2 tbsp sugar, white granulated
  • 1 tbsp garlic, minced
  • 2 tsp curry paste, Thai red
  • 10 oz beef, flank steak
  • 4 cups mixed greens, mesclun
  • 3/4 cup basil, fresh, sliced thin
  • 3/4 cup cilantro, fresh, chopped
  • 1 onion, red, thinly sliced (~2 3/4 cups)
  • 1 cucumber, english, quartered, seeded, julienned (~3 cups)
  • 1 cup bean sprouts
  • 1/4 cup peanuts, chopped , roasted
  • 2 onion, green / scallion, sliced thin diagonally (~1/3 cup)
Instructions:
  1. Prep
    1. Whisk together soy sauce, lime juice, water, sugar, garlic, and chili paste.
    2. Pour 3 tablespoons into resealable plastic bag.
    3. Cover and chill remaining dressing for salad.
    4. Add steak to bag, seal, and turn to coat.
    5. Marinate 20 minutes.
    6. Preheat the barbecue.
  2. Cooking
    1. Grill steak 8 to 10 minutes, turning once, for medium-rare.
    2. Let rest 5 minutes and slice thinly at an angle, across the grain.
    3. Toss together greens, basil, and cilantro in large bowl.
    4. Evenly divide among plates.
    5. Sprinkle with onions, cucumbers, and bean sprouts.
    6. Top with steak, drizzle with dressing, and sprinkle with peanuts and green onions.
