Ingredients:
  • 2 tomatoes, hot house, cut into 1/4" thick slices
  • 1 onion, red, sliced thin
  • 3 tbsp vinegar, red wine
  • 1/2 tsp pepper, black freshly ground
  • 4 cups arugula, baby
  • 8 slice, large (4-1/2" x 3-1/4" x 3/4") bread, ciabatta or italian, toasted
  • 4 oz cheese, mozzarella, low sodium, sliced thin (~4 slice (1 oz))
  • 4 leaves basil, fresh, sliced thin (~2 1/4 tsp)
Instructions:
  1. Prep
    1. Combine the tomato slices with the red onion, vinegar and pepper.
    2. Marinate for 20 minutes, covered, tossing occasionally.
    3. Transfer tomatoes and onions to a plate using a slotted spoon and add the arugula to the marinade.
    4. Toss the arugula to coat.
    5. Arrange arugula on bottom focaccia half and top with mozzarella, basil, tomatoes, onion, and remaining focaccia half, pressing together gently.
    6. Cut sandwiches half and serve.
